Abstract

Smokva (Ficus carica L.) se smatra jednom od najstarijih kultiviranih vrsta na svijetu. Porijeklom je iz Male Azije odakle se proširila na područje Mediterana. Najveći proizvođač i izvoznik smokava je Turska.Smokva je u Republici Hrvatskoj vrlo slabo zastupljena kao monokultura te je susrećemo kao pojedinačno stablo. Povećan je interes za uzgoj smokve zbog nutritivne vrijednosti i otkupne cijene plodova te njene dodane vrijednosti u vidu prerađevine. Najzastupljenije sorte u Hrvatskoj su: Petrovača bijela, Petrovača crna, Bjelica, Zamorčica, Zimica, Šaraguja, Bružetka bijela.Najviše se konzumira u svježem stanju, ali zbog brze kvarljivosti često se prerađuje ili suši. Smokvarstvo postoji samo kao svojevrsna nadopuna glavnih djelatnosti.Sušenje smokava u Istri nije toliko rašireno kao u Dalmaciji, gdje je tradicionalno sušenje smokava njihova baština. U Istri je sušenje svedeno na vlastite potrebe, dok se turistima prodaju smokve u svježem stanju, a oštećeni se plodovi prerađuju.

Abstract (english)

The Fig tree (Ficus carica L.) is considered one of the oldest cultivated species in the world. Originally from Asia Minor, it spread to the Meditterranean. The largest producer and exporter of figs is Turkey. The fig tree is very poorly represented in the Republic of Croatia as a monoculture, and we come across it as an individual tree. The interest in growing figs has increased because of the nutritional value and purchase price of the fruit and its added value in the form of processed products. The most common varieties in Croatia are: Petrovača white, Petrovača black, Bjelica, Zamorčica, Zimica, Šaraguja, Bružetka white. It is mostly consumed in the fresh state, but due to its quick perishability it is often processed or dried. Fig production only exist as a kind of complement to the main activities. Fig drying in Istria is not as widespread as in Dalmatia, where traditional fig drying is their heritage. In Istria, drying is reduced to its own needs, while tourists are offered fresh figs and damaged fruits is processed.
