Abstract

Mikotoksini su sekundarni metaboliti plijesni koji onečišćuju žitarice i druge namirnice te predstavljaju opasnost za zdravlje ljudi i životinja. Vrlo efikasna i sigurna metoda konzerviranja namirnica u prehrambenoj tehnologiji je zračenje. Kako bi se sačuvala nutritivna vrijednost i senzorska svojstva namirnica, Svjetska zdravstvena organizacija (WHO) preporuča zračenje u dozi od 10 kGy. Cilj ovog rada bio je istražiti utjecaj gama zračenja na rast plijesni Aspergillus niger 388 i biosintezu aflatoksina B1. Primijenjene su doze gama zračenja radioaktivnog izotopa 60Co od 1 do 10 kGy. Rezultati istraživanja pokazuju da je za zaustavljanje rasta kolonija plijesni Aspergillus niger 388, germinacije spora plijesni, sporulacije razvijenog micelija plijesni i biosinteze aflatoksina B1 dovoljno gama zračenje u dozi od 5 kGy.

Abstract (english)

Mycotoxins are secondary metabolites produced by various strains of moulds and are natural contaminants of cereals and other commodities. They represent a danger to human and animal health. A highly efficient and safe method of preserving foods in food technology is radiation. In order to preserve the nutritional value and sensory of foods, The World Health Organization (WHO) recommends radiation of 10 kGy. The aim of this study was to investigate the effect of gamma radiation on the growth of Aspergillus niger 388 and biosynthesis of aflatoxin B1. The applied doses of 60Co gamma radiation were 1-10 kGy. The results have demonstrated that the dose of 5 kGy stopped the growth of Aspergillus niger 388 colonies, germination of spores, sporulation of the mycelium of developed mold and aflatoxin B1 biosynthesis.
